An easy, refreshing, delicious salad for those vine-ripened tomatoes. Tomatoes, mozzarella, and basil!
This is a perfect summer-time salad. Use vine-ripened tomatoes and fresh basil for a quick salad that goes perfect with grilled meats. You can use fresh mozzarella if you want, but I prefer just the regular mozzarella. Fresh mozzarella has a lighter flavor to me (it’s almost way more expensive). However, fresh tomatoes and basil and extra-virgin olive oil are must haves. Don’t skimp on those.
Ingredients
Fresh tomatoes, sliced
Mozzarella (fresh, if you must), thinly sliced
Fresh basil, chopped
Extra-virgin olive oil
Directions
Alternate slices of mozzarella and tomatoes on a plate. Drizzle with olive oil. Sprinkle with the chopped fresh basil. Salt and freshly ground black pepper to tastes.
